Spicy Air-Fried Vegan Corn and Pumpkin Rice

  • 2 cups of corn kernels
  • 2 cups of diced pumpkin
  • 2 cups of rice
  • Cooking spray for the air fryer
  • Salt and pepper to taste
  • 1 teaspoon of paprika
  • 1 teaspoon of cayenne pepper
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Fresh cilantro for garnish


  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, toss the corn and pumpkin with a light coating of cooking spray, then season with salt, pepper, paprika, and cayenne pepper.
  3. Place the seasoned corn and pumpkin in the air fryer basket and cook for 15-20 minutes, shaking the basket halfway through, until the vegetables are golden and slightly crispy.
  4. While the vegetables are cooking, rinse the rice and cook according to package instructions.
  5. Once the rice is cooked, fluff it with a fork and season with garlic powder and onion powder.
  6. In a large bowl, mix the air-fried corn and pumpkin with the seasoned rice.
  7. Garnish with fresh cilantro before serving.
