- Blanch the Peas: Bring a pot of water to a boil, add the peas, and cook for about 2 minutes. Then, drain and immediately transfer the peas to a bowl of ice water to stop the cooking process. Drain again.
- Create the Guacamole Base: In a food processor, combine the blanched peas, crispy bacon, and a drizzle of olive oil. Pulse until the mixture is coarsely chopped and well combined.
- Season and Serve: Taste the guacamole and adjust the seasoning as needed. Serve it with your favorite tortilla chips or as a topping for tacos.
