Spicy Bison Stir Fry

  • 1 lb bison, thinly sliced
  • 1 beet, julienned
  • 2 tbsp tomato paste
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 tbsp soy sauce
  • 1 tsp ginger, grated
  • 1 tsp red chili flakes
  • Salt and pepper to taste
  • Cooked rice, for serving


  1. In a wok, heat the vegetable oil over high heat.
  2. Add the bison slices and sear until browned, then remove from the wok and set aside.
  3. In the same wok, add the onion and garlic, and sauté until fragrant.
  4. Add the beet, red and green bell peppers, and sauté until slightly softened.
  5. Stir in the tomato paste, soy sauce, ginger, and red chili flakes.
  6. Return the bison to the wok and toss to combine with the vegetables and sauce.
  7. Season with salt and pepper to taste.
  8. Serve the spicy bison stir fry over cooked rice.
