Spicy Bison Stir Fry

This Chinese-inspired recipe combines the bold flavors of bison, beet, and tomato paste in a spicy stir fry. Perfect for a delicious and hearty meal for four!
Ingredients
- 1 lb bison, thinly sliced
- 1 beet, julienned
- 2 tbsp tomato paste
- 2 tbsp vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 tbsp soy sauce
- 1 tsp ginger, grated
- 1 tsp red chili flakes
- Salt and pepper to taste
- Cooked rice, for serving
Instructions
- In a wok, heat the vegetable oil over high heat.
- Add the bison slices and sear until browned, then remove from the wok and set aside.
- In the same wok, add the onion and garlic, and sauté until fragrant.
- Add the beet, red and green bell peppers, and sauté until slightly softened.
- Stir in the tomato paste, soy sauce, ginger, and red chili flakes.
- Return the bison to the wok and toss to combine with the vegetables and sauce.
- Season with salt and pepper to taste.
- Serve the spicy bison stir fry over cooked rice.
