Spicy Black Bean and Cucumber Salad

This Spicy Black Bean and Cucumber Salad is packed with flavor and can be whipped up in no time. Perfect for a healthy lunch or light dinner.


  • 2 cans of black beans, drained and rinsed
  • 1 cucumber, diced
  • 1 can of mixed vegetables, drained
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


  1. Prep the Ingredients: Dice the cucumber into small, bite-sized pieces. Drain and rinse the black beans and canned mixed vegetables.
