Ingredients
- 500g chicken, cut into bite-sized pieces
- 3 medium potatoes, peeled and diced
- 2 tablespoons curry powder
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 green pepper, chopped
- 2 tablespoons cooking oil
- Salt to taste
- Fresh coriander for garnish (optional)
Instructions
- Heat the Oil: In a large pan, heat the cooking oil over medium heat.

- Simmer: Add 1 cup of water to the pan, cover, and let it simmer on low heat for about 20-25 minutes, or until the potatoes are tender and the chicken is cooked through. Stir occasionally and add more water if necessary to prevent sticking.
- Adjust Seasoning: Taste and season with salt as needed. Cook for an additional 5 minutes uncovered to thicken the sauce if desired.
