Spicy Chicken and Rice

Ingredients

  • 4 chicken breasts
  • 2 cups of rice
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1 teaspoon of paprika
  • 1 teaspoon of cayenne pepper
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Season the chicken breasts with salt, pepper, paprika, and cayenne pepper.
  4. Sear the chicken breasts in the skillet until browned on both sides, about 3-4 minutes per side. Remove from the skillet and set aside.
  5. In the same skillet, add the diced onions and minced garlic. Sauté until the onions are translucent and fragrant, about 5 minutes.
  6. Add the rice to the skillet and stir to coat it with the onion and garlic mixture.
  7. Transfer the rice mixture to a baking dish and spread it evenly.
  8. Place the seared chicken breasts on top of the rice.
  9. Sprinkle dried thyme over the chicken and rice.
  10. Cover the baking dish with foil and bake for 25-30 minutes, or until the chicken is cooked through and the rice is tender.
  11. Remove the foil and broil for an additional 2-3 minutes to crisp up the chicken skin.
  12. Serve hot and enjoy the spicy chicken and rice.
