Spicy Chicken and Rice
What Started it all:
chicken, rice, onions.
Ingredients
- 4 chicken breasts
- 2 cups of rice
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne pepper
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt, pepper, paprika, and cayenne pepper.
- Place the chicken breasts in the skillet and cook until browned on both sides. Remove from the skillet and set aside.
- In the same skillet, add the chopped onions and minced garlic. Cook until the onions are translucent and fragrant.
- Add the rice to the skillet and stir to coat it with the onion and garlic mixture.
- Pour in 4 cups of water and bring to a boil. Reduce the heat to low, cover, and let simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
- Meanwhile, preheat the oven to 375°F (190°C).
- Place the cooked chicken breasts on a baking sheet and bake for about 10-15 minutes or until the chicken is fully cooked.
- Serve the spicy chicken on a bed of rice, garnished with fresh herbs if desired.
