Spicy Chicken and Rice

Ingredients

  • 4 chicken breasts
  • 2 cups of rice
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, paprika, and cayenne pepper.
  3. Place the chicken breasts in the skillet and cook until browned on both sides. Remove from the skillet and set aside.
  4. In the same skillet, add the chopped onions and minced garlic. Cook until the onions are translucent and fragrant.
  5. Add the rice to the skillet and stir to coat it with the onion and garlic mixture.
  6. Pour in 4 cups of water and bring to a boil. Reduce the heat to low, cover, and let simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
  7. Meanwhile, preheat the oven to 375°F (190°C).
  8. Place the cooked chicken breasts on a baking sheet and bake for about 10-15 minutes or until the chicken is fully cooked.
  9. Serve the spicy chicken on a bed of rice, garnished with fresh herbs if desired.
