Spicy Chicken and Rice with Peppers and Onion

This Spicy Chicken and Rice recipe is a delicious and flavorful dish that is perfect for a family dinner. The combination of tender chicken, fragrant rice, and sautéed peppers and onions creates a satisfying meal that will leave everyone wanting more.


  • 4 chicken breasts
  • 2 cups of rice
  • 2 bell peppers (any color), sliced
  • 1 onion, diced
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


  1. Cook the rice according to the package instructions and set aside.
  2. Season the chicken breasts with salt, pepper, paprika, and cayenne pepper.
  3. Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 5-6 minutes per side, or until cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the sliced bell peppers and diced onion. Sauté for about 5 minutes, or until they are tender.
  5. Add the minced garlic to the skillet and cook for an additional minute.
  6. Slice the cooked chicken breasts into strips and return them to the skillet with the peppers and onions. Stir to combine.
  7. Add the cooked rice to the skillet and mix everything together until well combined. Cook for an additional 2-3 minutes to heat the rice through.
