  • 12 oz (340g) chicken breast, thinly sliced
  • 8 oz (225g) dried Chinese egg noodles
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 green onions, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon chili garlic sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste


  1. Cook the Chinese egg noodles according to the package instructions. Drain and set aside.
  2. In a large wok or skillet, heat the vegetable oil over medium-high heat.
  3. Add the sliced chicken breast and stir-fry until cooked through and slightly browned. Remove the chicken from the wok and set aside.
  4. In the same wok, add a little more oil if needed and sauté the minced garlic and grated ginger until fragrant.
  5. Add the sliced red and green bell peppers, and continue to stir-fry for a few minutes until they are slightly softened.
  6. Return the cooked chicken to the wok and add the green onions, soy sauce, oyster sauce, chili garlic sauce, sesame oil, rice vinegar, and sugar. Stir well to combine.
  7. Add the cooked noodles to the wok and toss everything together until the noodles are coated in the sauce and heated through.
  8. Season with salt and pepper to taste.
  9. Serve the spicy chicken noodles hot, garnished with additional chopped green onions if desired.
