Ingredients
- 12 oz (340g) chicken breast, thinly sliced
- 8 oz (225g) dried Chinese egg noodles
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 2 green onions, chopped
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon chili garlic sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- Salt and pepper to taste
Instructions
- Cook the Chinese egg noodles according to the package instructions. Drain and set aside.
- In a large wok or skillet, heat the vegetable oil over medium-high heat.
- Add the sliced chicken breast and stir-fry until cooked through and slightly browned. Remove the chicken from the wok and set aside.
- In the same wok, add a little more oil if needed and sauté the minced garlic and grated ginger until fragrant.
- Add the sliced red and green bell peppers, and continue to stir-fry for a few minutes until they are slightly softened.
- Return the cooked chicken to the wok and add the green onions, soy sauce, oyster sauce, chili garlic sauce, sesame oil, rice vinegar, and sugar. Stir well to combine.
- Add the cooked noodles to the wok and toss everything together until the noodles are coated in the sauce and heated through.
- Season with salt and pepper to taste.
- Serve the spicy chicken noodles hot, garnished with additional chopped green onions if desired.
