Spicy Chicken Rice with Caramelized Onions

Note: This recipe is packed with bold flavors and a kick of spiciness. Make sure to adjust the amount of cayenne pepper according to your preference for heat.
Ingredients
- 4 chicken breasts
- 2 cups of rice
- 2 onions
- 4 tablespoons of olive oil
- 2 teaspoons of paprika
- 1 teaspoon of cayenne pepper
- 1 teaspoon of garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F.
- Season the chicken breasts with paprika, cayenne pepper, garlic powder, salt, and pepper. Make sure to coat them evenly.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5 minutes on each side until they are golden brown. Transfer the chicken to a baking dish and set aside.
- In the same skillet, add the remaining 2 tablespoons of olive oil and sliced onions. Cook the onions over medium heat until they are caramelized and golden brown. This should take about 15-20 minutes. Make sure to stir occasionally to prevent burning.
- While the onions are cooking, prepare the rice according to the package instructions.
- Once the onions are caramelized, spread them evenly over the chicken breasts in the baking dish.
- Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- Serve the spicy chicken rice with a generous portion of caramelized onions on top. Enjoy!
