Spicy Chicken Rice with Caramelized Onions

Note: This recipe is packed with bold flavors and a kick of spiciness. Make sure to adjust the amount of cayenne pepper according to your preference for heat.

Ingredients

  • 4 chicken breasts
  • 2 cups of rice
  • 2 onions
  • 4 tablespoons of olive oil
  • 2 teaspoons of paprika
  • 1 teaspoon of cayenne pepper
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F.
  2. Season the chicken breasts with paprika, cayenne pepper, garlic powder, salt, and pepper. Make sure to coat them evenly.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5 minutes on each side until they are golden brown. Transfer the chicken to a baking dish and set aside.
  4. In the same skillet, add the remaining 2 tablespoons of olive oil and sliced onions. Cook the onions over medium heat until they are caramelized and golden brown. This should take about 15-20 minutes. Make sure to stir occasionally to prevent burning.
  5. While the onions are cooking, prepare the rice according to the package instructions.
  6. Once the onions are caramelized, spread them evenly over the chicken breasts in the baking dish.
  7. Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  8. Serve the spicy chicken rice with a generous portion of caramelized onions on top. Enjoy!
