Spicy Chicken Stir-Fry with Rice

This Spicy Chicken Stir-Fry with Rice recipe is a delicious and flavorful dish that is perfect for a quick and easy weeknight dinner. The combination of tender chicken, colorful peppers, and aromatic onion creates a satisfying and healthy meal for four people.
Ingredients
- 500g chicken breast, cut into thin strips
- 2 cups cooked rice
- 2 bell peppers, thinly sliced (assorted colors)
- 1 large onion, thinly sliced
- 3 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon sriracha sauce (adjust according to spice preference)
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.
- Add the chicken strips to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil and heat it up. Add the sliced onion and cook until softened and slightly caramelized, about 5 minutes.
- Add the sliced peppers to the skillet and cook for an additional 3-4 minutes until they are tender-crisp.
- Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.
- Return the cooked chicken to the skillet and stir to combine with the vegetables.
- In a small bowl, whisk together the soy sauce and sriracha sauce. Pour the sauce over the chicken and vegetables, and stir to coat everything evenly.
- Reduce the heat to low and let the flavors meld for a few minutes.
- Serve the spicy chicken stir-fry over a bed of cooked rice.
- Season with salt and pepper to taste.
