Spicy Chicken Stir-Fry with Rice

This Spicy Chicken Stir-Fry with Rice recipe is a delicious and flavorful dish that is perfect for a quick and easy weeknight dinner. The combination of tender chicken, colorful peppers, and aromatic onion creates a satisfying and healthy meal for four people.

Ingredients

  • 500g chicken breast, cut into thin strips
  • 2 cups cooked rice
  • 2 bell peppers, thinly sliced (assorted colors)
  • 1 large onion, thinly sliced
  • 3 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha sauce (adjust according to spice preference)
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.
  2. Add the chicken strips to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil and heat it up. Add the sliced onion and cook until softened and slightly caramelized, about 5 minutes.
  4. Add the sliced peppers to the skillet and cook for an additional 3-4 minutes until they are tender-crisp.
  5. Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.
  6. Return the cooked chicken to the skillet and stir to combine with the vegetables.
  7. In a small bowl, whisk together the soy sauce and sriracha sauce. Pour the sauce over the chicken and vegetables, and stir to coat everything evenly.
  8. Reduce the heat to low and let the flavors meld for a few minutes.
  9. Serve the spicy chicken stir-fry over a bed of cooked rice.
  10. Season with salt and pepper to taste.
