Spicy Fish Fillets with Beet Rice and Gorgonzola-Pepperjack Sauce

Ingredients
- 4 fish fillets (tilapia, cod, or your preferred white fish)
- 2 tbsp flour
- 2 tbsp chili sauce
- 2 tbsp soy sauce
- 2 eggs
- Salt and pepper to taste
- 1 cup rice
- 2 medium beets, peeled and grated
- 2 cups water or broth

- 1/2 cup gorgonzola cheese, crumbled
- 1/2 cup pepperjack cheese, shredded
- 1 cup heavy cream
Instructions
- Rinse the rice under cold water until the water runs clear.

- Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

- In a bowl, mix the chili sauce and soy sauce.
- Season the fish fillets with salt and pepper.
- Dredge each fillet in flour, shaking off any excess.
- Beat the eggs in a shallow dish and dip each floured fillet into the egg, ensuring an even coating.
