Spicy Green Bean and Almond Curry

  • 1 cup fresh green beans, trimmed
  • 1/2 cup almonds
  • 1/4 cup dark chocolate chips (yes, you read that right - dark chocolate adds a rich depth to the curry!)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 cup vegetable broth
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (optional)


  1. Add the onion, garlic, and ginger to the slow cooker. Cook on low for 8 hours or high for 4 hours.
  2. Add the cumin, coriander, and cayenne pepper to the slow cooker. Stir to combine.
  3. Add the green beans, almonds, chocolate chips, diced tomatoes, and vegetable broth to the slow cooker. Stir to combine.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with chopped cilantro if desired.
