Spicy Ham & Potato Curry with a Creamy Twist

This recipe combines the heartiness of ham and potatoes with a creamy mayonnaise twist, all cooked to perfection in a pressure cooker. Perfect for a quick and satisfying meal for four people.
Ingredients
- 400g ham, cubed
- 4 medium potatoes, peeled and diced
- 1 cup mayonnaise
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 2 tablespoons vegetable oil
- 1 cup water
- Salt to taste
- Fresh coriander, chopped (for garnish)
Instructions
- Peel and dice your potatoes, cube the ham, and finely chop the onion. Mince the garlic and grate the ginger.
- Heat the vegetable oil in the pressure cooker over medium heat. Add the cumin seeds and let them sputter.
- Throw in the chopped onions, garlic, and ginger. Sauté until the onions are golden brown.
- Add the curry powder, turmeric, and garam masala to the pot. Stir well to coat the onions in the spices.
- Add the cubed ham to the pot and stir to combine with the spices. Cook for about 5 minutes, letting the ham absorb all those flavors.
- Add the diced potatoes to the pot. Stir them well to ensure they're coated in the spice mixture.
- Pour in the cup of water. Stir well, making sure nothing is sticking to the bottom.
- Close the lid of the pressure cooker and cook on high pressure for 8 minutes.
- Carefully release the pressure according to your pressure cooker's instructions.
- Once the pressure is released, open the lid and stir in the cup of mayonnaise. Mix well until it's fully incorporated and creamy.
- Taste and add salt as needed. Garnish with fresh chopped coriander.
