Spicy Indian Tuna Curry

Ingredients
- 1 lb Tuna, cut into chunks
- 1 Cucumber, diced
- 4 cloves Garlic, minced
- 1 cup Water
- 1 cup Coconut milk
- 2 tbsp Curry powder
- 1 tsp Turmeric
- 1 tsp Cumin
- 1 tsp Paprika
- Salt to taste
- Pepper to taste
- Fresh cilantro for garnish
- Cooked rice or naan for serving
Instructions
- In the instant pot, sauté the garlic for 1 minute.
- Add the tuna chunks and sear for 2 minutes.
- Stir in the curry powder, turmeric, cumin, and paprika, and cook for another 2 minutes.
- Pour in the water and coconut milk, then add the diced cucumber.
- Secure the lid and cook on high pressure for 5 minutes.
- Once done, carefully release the pressure and open the lid.
- Season with salt and pepper, then stir well.
- Serve the spicy Indian tuna curry over cooked rice or with naan.
- Garnish with fresh cilantro before serving.
