Spicy Leek and Kidney Bean Stir-Fry

Ingredients
- 2 cups kidney beans
- 2 leeks
- 2 tablespoons mustard
- Salt and pepper to taste
- 1 tablespoon vegetable oil
- Cooked rice, to serve
Instructions
- Begin by rinsing the kidney beans under cold water and set them aside.
- Slice the leeks into thin rounds and set them aside as well.
- In a microwave-safe bowl, combine the kidney beans, leeks, and mustard.
- Season with salt and pepper to taste.
- Cover the bowl with a microwave-safe lid or microwave-safe plastic wrap.
- Microwave the mixture on high for 5-6 minutes, or until the leeks are tender and the beans are heated through.
- Carefully remove the bowl from the microwave and give the mixture a good stir.
- In a large pan, heat the vegetable oil over medium-high heat.
- Transfer the microwaved kidney bean and leek mixture to the pan.
- Stir-fry for 3-4 minutes, or until everything is well combined and heated through.
