A bold and flavorful Japanese-inspired dish that combines the crunch of peanuts and cereal with the tender bite of cauliflower, all infused with a spicy kick.

Ingredients

  • 1 head of cauliflower, broken into florets
  • 1/2 cup of peanuts
  • 1 cup of cereal (preferably a crunchy, rice-based cereal)
  • 2 tablespoons of peanut oil
  • 1 tablespoon of soy sauce
  • 1 tablespoon of honey
  • 1 teaspoon of grated ginger
  • 1/4 teaspoon of red pepper flakes (or more to taste)
  • Salt, to taste

Instructions

  1. Heat it up! Preheat the stove to medium-high heat.
  2. In a large skillet, heat the peanut oil over medium-high heat.
  3. Add the peanuts and cook, stirring frequently, until fragrant and lightly toasted, about 3-4 minutes.
  4. Add the cauliflower florets to the skillet and cook, stirring occasionally, until tender and lightly browned, about 5-6 minutes.
  5. In a small bowl, whisk together the soy sauce, honey, grated ginger, and red pepper flakes.
  6. Pour the soy sauce mixture over the cauliflower and peanuts, and stir to combine.
  7. Add the cereal to the skillet and stir-fry until the cereal is toasted and the mixture is well combined.
  8. Season with salt to taste.
