Spicy Peanut Cauliflower Crunch

A bold and flavorful Japanese-inspired dish that combines the crunch of peanuts and cereal with the tender bite of cauliflower, all infused with a spicy kick.
Ingredients
- 1 head of cauliflower, broken into florets
- 1/2 cup of peanuts
- 1 cup of cereal (preferably a crunchy, rice-based cereal)
- 2 tablespoons of peanut oil
- 1 tablespoon of soy sauce
- 1 tablespoon of honey
- 1 teaspoon of grated ginger
- 1/4 teaspoon of red pepper flakes (or more to taste)
- Salt, to taste
Instructions
- Heat it up! Preheat the stove to medium-high heat.
- In a large skillet, heat the peanut oil over medium-high heat.
- Add the peanuts and cook, stirring frequently, until fragrant and lightly toasted, about 3-4 minutes.
- Add the cauliflower florets to the skillet and cook, stirring occasionally, until tender and lightly browned, about 5-6 minutes.
- In a small bowl, whisk together the soy sauce, honey, grated ginger, and red pepper flakes.
- Pour the soy sauce mixture over the cauliflower and peanuts, and stir to combine.
- Add the cereal to the skillet and stir-fry until the cereal is toasted and the mixture is well combined.
- Season with salt to taste.
