Spicy Peanut-Crusted Cauliflower in Coconut Milk

Ingredients
- 1 head of cauliflower, cut into florets
- 1 cup of peanuts, crushed
- 1 can of coconut milk
- Salt and pepper to taste
- Cooking spray for the air fryer
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a food processor, crush the peanuts until they are finely ground.
- Dip each cauliflower floret into the coconut milk, allowing the excess to drip off.
- Roll the cauliflower florets in the crushed peanuts, coating them evenly.
- Lightly spray the air fryer basket with cooking spray to prevent sticking.
- Place the peanut-crusted cauliflower florets in the air fryer basket in a single layer.
- Air fry for 12-15 minutes, or until the cauliflower is golden brown and crispy.
- In a small saucepan, heat the remaining coconut milk over medium heat and season with salt and pepper.
- Serve the crispy peanut-crusted cauliflower with the warm coconut milk for dipping.
