Spicy Peanut-Crusted Cauliflower in Coconut Milk

Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 cup of peanuts, crushed
  • 1 can of coconut milk
  • Salt and pepper to taste
  • Cooking spray for the air fryer

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. In a food processor, crush the peanuts until they are finely ground.
  3. Dip each cauliflower floret into the coconut milk, allowing the excess to drip off.
  4. Roll the cauliflower florets in the crushed peanuts, coating them evenly.
  5. Lightly spray the air fryer basket with cooking spray to prevent sticking.
  6. Place the peanut-crusted cauliflower florets in the air fryer basket in a single layer.
  7. Air fry for 12-15 minutes, or until the cauliflower is golden brown and crispy.
  8. In a small saucepan, heat the remaining coconut milk over medium heat and season with salt and pepper.
  9. Serve the crispy peanut-crusted cauliflower with the warm coconut milk for dipping.
