Ingredients

  • 2 cups of rice
  • 1 lb of chicken breast, cut into bite-sized pieces
  • 1 cup of pineapple chunks
  • 1 onion, sliced
  • 1 cup of sliced mushrooms
  • 2 tablespoons of Frank's Red Hot sauce
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package instructions.
  2. In a large skillet, heat some oil over medium-high heat.
  3. Add the chicken pieces and cook until they are golden brown and fully cooked.
  4. Remove the cooked chicken from the skillet and set aside.
  5. In the same skillet, add the sliced onions and mushrooms. Cook until they are softened.
  6. Add the pineapple chunks and stir-fry for a few minutes.
  7. Return the cooked chicken to the skillet.
  8. Pour the Frank's Red Hot sauce over the mixture and stir well to combine.
  9. Season with salt and pepper to taste.
  10. Serve the spicy pineapple chicken stir-fry over the cooked rice.
