Spicy Pineapple Chicken Stir-Fry

This recipe is a delicious combination of tender chicken, sweet pineapple, and spicy flavors. It’s a perfect dish to serve for a family dinner or a casual get-together.
Ingredients
- 2 cups of rice
- 1 lb of chicken breast, cut into bite-sized pieces
- 1 cup of pineapple chunks
- 1 onion, sliced
- 1 cup of sliced mushrooms
- 2 tablespoons of Frank's Red Hot sauce
- Salt and pepper to taste
Instructions
- Cook the rice according to package instructions.
- In a large skillet, heat some oil over medium-high heat.
- Add the chicken pieces and cook until they are golden brown and fully cooked.
- Remove the cooked chicken from the skillet and set aside.
- In the same skillet, add the sliced onions and mushrooms. Cook until they are softened.
- Add the pineapple chunks and stir-fry for a few minutes.
- Return the cooked chicken to the skillet.
- Pour the Frank's Red Hot sauce over the mixture and stir well to combine.
- Season with salt and pepper to taste.
- Serve the spicy pineapple chicken stir-fry over the cooked rice.
