Spicy Pork Roast with Sweet Potatoes

Ingredients

  • 1 pork roast (about 2 lbs)
  • 2 large sweet potatoes, peeled and cut into chunks
  • 2 cups broth or stock (chicken or vegetable)
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the pork roast generously with salt, pepper, paprika, cayenne pepper, garlic powder, and onion powder.
  3. In a large skillet, heat the olive oil over medium-high heat. Sear the pork roast on all sides until browned, about 3-4 minutes per side.
  4. Place the seared pork roast in a roasting pan or baking dish.
  5. Add the sweet potatoes around the pork roast in the roasting pan.
  6. Pour the broth or stock over the pork roast and sweet potatoes.
  7. Cover the roasting pan with foil and roast in the preheated oven for 1 hour.
  8. After 1 hour, remove the foil and continue roasting for another 30 minutes, or until the pork roast is fully cooked and the sweet potatoes are tender.
  9. Remove the pork roast from the oven and let it rest for 10 minutes before slicing.
  10. Serve the spicy pork roast with the roasted sweet potatoes and drizzle with the pan juices.
