Spicy Pork Roast with Sweet Potatoes

Pork roast, Sweet potato, broth or stock (chicken, vegetable), stove

Ingredients
- 1 pork roast (about 2 lbs)
- 2 large sweet potatoes, peeled and cut into chunks
- 2 cups broth or stock (chicken or vegetable)
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Instructions
- Preheat the oven to 375°F (190°C).
- Season the pork roast generously with salt, pepper, paprika, cayenne pepper, garlic powder, and onion powder.
- In a large skillet, heat the olive oil over medium-high heat. Sear the pork roast on all sides until browned, about 3-4 minutes per side.
- Place the seared pork roast in a roasting pan or baking dish.
- Add the sweet potatoes around the pork roast in the roasting pan.
- Pour the broth or stock over the pork roast and sweet potatoes.
- Cover the roasting pan with foil and roast in the preheated oven for 1 hour.
- After 1 hour, remove the foil and continue roasting for another 30 minutes, or until the pork roast is fully cooked and the sweet potatoes are tender.
- Remove the pork roast from the oven and let it rest for 10 minutes before slicing.
- Serve the spicy pork roast with the roasted sweet potatoes and drizzle with the pan juices.
