Spicy Pork Shoulder with Kimchi

This Korean-inspired dish is packed with flavor and perfect for a cozy, comforting dinner. The tender pork and tangy kimchi create the perfect balance of spicy and savory.
Ingredients
- 1.5 pounds pork shoulder, cut into bite-sized pieces
- 1 cup kimchi, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon honey
- 1 tablespoon vegetable oil
- Salt and pepper, to taste
- Cooked white rice, for serving
Instructions
- Preheat the oven to 350°F.
- In a large bowl, combine the pork, garlic, ginger, soy sauce, sesame oil, gochujang, honey, and a pinch of salt and pepper. Toss to combine.
- Heat the vegetable oil in a large oven-safe skillet over medium-high heat. Add the pork and cook until browned on all sides, about 8-10 minutes.
- Add the chopped kimchi to the skillet, stirring to combine with the pork. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the pork is cooked through.
- Serve the spicy pork shoulder and kimchi over cooked white rice. Enjoy!
