Spicy Rice and Corn Stir-Fry

A fiery and flavorful dish that combines the goodness of rice, corn, tomatoes, and eggs. This Spicy Rice and Corn Stir-Fry is the perfect meal to satisfy your taste buds and leave you craving for more.
Ingredients
- 2 cups of rice
- 1 cup of corn kernels
- 2 tomatoes, diced
- 4 eggs
- 2 tablespoons of vegetable oil
- 1 teaspoon of chili powder
- 1 teaspoon of paprika
- 1/2 teaspoon of cumin powder
- Salt, to taste
- Freshly ground black pepper, to taste
- Fresh cilantro, for garnish
Instructions
- Cook the rice according to package instructions. Once cooked, set it aside.
- In a large skillet, heat the vegetable oil over medium heat.
- Add the corn kernels to the skillet and sauté for 3-4 minutes, until they start to brown slightly.
- Add the diced tomatoes to the skillet and cook for another 2-3 minutes, until they soften.
- Push the corn and tomatoes to one side of the skillet and crack the eggs into the empty space. Cook the eggs to your desired doneness, either sunny-side-up or scrambled.
- Once the eggs are cooked, mix them with the corn and tomatoes.
- Add the cooked rice to the skillet and stir everything together.
- Sprinkle the chili powder, paprika, and cumin powder over the rice mixture. Season with salt and black pepper to taste.
- Stir everything together until well combined and heated through.
- Remove from heat and garnish with fresh cilantro.
