Spicy Rice and Corn Stir-Fry

  • 2 cups of rice
  • 1 cup of corn kernels
  • 2 tomatoes, diced
  • 4 eggs
  • 2 tablespoons of vegetable oil
  • 1 teaspoon of chili powder
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cumin powder
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh cilantro, for garnish


  1. Cook the rice according to package instructions. Once cooked, set it aside.
  2. In a large skillet, heat the vegetable oil over medium heat.
  3. Add the corn kernels to the skillet and sauté for 3-4 minutes, until they start to brown slightly.
  4. Add the diced tomatoes to the skillet and cook for another 2-3 minutes, until they soften.
  5. Push the corn and tomatoes to one side of the skillet and crack the eggs into the empty space. Cook the eggs to your desired doneness, either sunny-side-up or scrambled.
  6. Once the eggs are cooked, mix them with the corn and tomatoes.
  7. Add the cooked rice to the skillet and stir everything together.
  8. Sprinkle the chili powder, paprika, and cumin powder over the rice mixture. Season with salt and black pepper to taste.
  9. Stir everything together until well combined and heated through.
  10. Remove from heat and garnish with fresh cilantro.
