Spicy Seafood and Chicken Medley

Ingredients
- 1 cup water
- 2 red chili peppers, finely chopped
- 1 large eggplant, diced
- 4 chicken thighs, boneless and skinless
- 1 pack of fish cakes, sliced
- 2 sweet potatoes, peeled and cubed
- 12 clams, cleaned
- 2 fillets of white fish (such as cod or halibut), cut into chunks
- 1 tablespoon frog legs meat (optional, for the adventurous)
- 1 cup crab meat, picked over for shells
Instructions
- Start by chopping the red chili peppers, dicing the eggplant, and cubing the sweet potatoes. Cut the chicken thighs into bite-sized pieces and slice the fish cakes. Clean the clams and cut the fish fillets into chunks.
- In a large pot, bring the water to a boil. Add the chicken thighs and cook until they are no longer pink. Remove the chicken and set aside. In the same pot, add the sweet potatoes and cook for about 10 minutes or until they start to soften. Add the eggplant and chili peppers, and cook for another 5 minutes.
- Add the clams, fish chunks, frog legs meat (if using), and crab meat to the pot. Simmer for about 5-7 minutes or until the clams open and the fish is cooked through.
- Return the chicken to the pot and add the sliced fish cakes. Stir well and let everything simmer together for another 5 minutes, allowing the flavors to meld.
- Ladle the medley into bowls and serve hot. Garnish with fresh herbs if desired.
