Spicy Shrimp and Sweet Potato Toasts

This dish combines the sweetness of roasted sweet potatoes, the tanginess of lemon, the creaminess of cheese, and the heat of chili peppers to create a delightful, flavorful toast. Perfect for a light lunch or a tasty appetizer!
Ingredients
- 1 lemon (zested and juiced)
- 4 slices of bread (your choice, but sourdough works great)
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 1-2 chili peppers (finely chopped, adjust to your spice preference)
- 2 medium sweet potatoes (peeled and diced)
- 16 large shrimp (peeled and deveined)
- Olive oil (for roasting and cooking)
- Salt and pepper (to taste)
- Fresh parsley (for garnish, optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the diced sweet potatoes with a drizzle of olive oil, salt, and pepper. Spread them out on a baking sheet and roast for about 20-25 minutes, or until tender and lightly browned. Remove from the oven and set aside.
- In a bowl, toss the shrimp with lemon zest, half of the lemon juice, chopped chili peppers, salt, and pepper. Heat a skillet over medium-high heat with a drizzle of olive oil. Cook the shrimp for about 2-3 minutes on each side, or until pink and opaque. Remove from heat and set aside.
- Lightly toast the 4 slices of bread until they are golden brown and crispy.
- Spread a layer of roasted sweet potatoes on each slice of toasted bread. Sprinkle shredded cheese over the sweet potatoes. Place 4 cooked shrimp on top of each slice. Drizzle with remaining lemon juice.
- Optionally, place the assembled toasts under a broiler for 1-2 minutes to melt the cheese slightly.
- Garnish with fresh parsley if desired. Serve immediately and enjoy!
