  • 2 tbsp oyster sauce
  • 1 tbsp chili paste (adjust to taste)
  • 2 tbsp vegetable oil
  • 1 tbsp sesame oil
  • Salt and pepper to taste

  1. Prepare the Ingredients: Peel and devein the shrimp. Dice the potatoes and chop the chard. Mince the garlic and ginger.
  2. Cook the Potatoes: Heat 1 tbsp of vegetable oil in a large frying pan over medium-high heat. Add the diced potatoes, season with salt and pepper, and cook until crispy and golden brown, about 10-12 minutes. Remove the potatoes from the pan and set aside.
  3. Cook the Shrimp: In the same frying pan, add another 1 tbsp of vegetable oil. Add the shrimp and cook until they turn pink, about 2-3 minutes per side. Remove the shrimp from the pan and set aside.

  5. Combine and Stir-Fry: Return the cooked potatoes and shrimp to the pan. Add the chopped chard and stir-fry for 2-3 minutes until the chard is wilted.
  6. Add the Sauces: Stir in the soy sauce, oyster sauce, and chili paste. Toss everything together to coat evenly, and cook for another 2-3 minutes until heated through.
  7. Serve: Transfer the stir-fry to a serving dish. Garnish with chopped scallions and sesame seeds.
