Spicy Tofu and Broccoli Stir-Fry

Ingredients
- 400g firm tofu, cubed
- 1 tbsp gochujang (Korean chili paste)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp cumin
- 1 head of broccoli, cut into florets
- 200g cherry tomatoes, halved
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 cup sauerkraut, drained
- 1 can (400g) beans (e.g., black beans or kidney beans), rinsed and drained
- 2 tbsp balsamic vinegar
- 1 tbsp white vinegar
- 2 tbsp corn starch
- 2 tbsp peanut butter
- 2 tbsp vegetable oil (for frying)
- Salt and pepper to taste
Instructions
- Prepare the Tofu: Press the tofu to remove excess moisture. Cut it into cubes and toss with garlic powder, onion powder, paprika, cumin, salt, and pepper. Sprinkle corn starch over the tofu and toss again to coat evenly.
- Cook the Tofu: In a large pan, heat 1 tablespoon of vegetable oil over medium-high heat. Add the tofu cubes and cook until golden and crispy on all sides, about 8-10 minutes. Remove from the pan and set aside.
- Sauté the Vegetables: In the same pan, add another tablespoon of vegetable oil. Add the sliced onion and minced garlic, sautéing until softened and fragrant, about 2-3 minutes.
- Add Broccoli and Beans: Toss in the broccoli florets and cook for another 5 minutes until they start to soften. Add the rinsed beans and cherry tomatoes, stirring to combine.
- Make the Sauce: In a small bowl, mix together gochujang, balsamic vinegar, white vinegar, and peanut butter until smooth. Pour this sauce over the vegetables and stir to coat everything evenly.
- Combine and Serve: Add the crispy tofu back to the pan along with the sauerkraut. Gently toss everything together and cook for another 2-3 minutes to heat through. Adjust seasoning with salt and pepper to taste.
