This bold and flavorful vegan pasta dish is perfect for four people. The fiery combination of tomatoes, radishes, and red pepper flakes creates a zesty and satisfying meal that will leave everyone asking for seconds. Enjoy!

Ingredients

  • 1 pound of pasta
  • 4 large tomatoes, diced
  • 1 cup of sliced radishes
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Heat the pressure cooker over medium heat and add the olive oil.
  2. Add the minced garlic and sauté for a minute until fragrant.
  3. Add the diced tomatoes, sliced radishes, and red pepper flakes to the pressure cooker.
  4. Season with salt and pepper to taste.
  5. Close the pressure cooker and cook for 5 minutes.
  6. While the pressure cooker is working its magic, cook the pasta according to the package instructions until al dente.
  7. Once the pressure cooker has released its pressure, carefully open it.
  8. Add the cooked pasta to the pressure cooker and toss everything together until well combined.
  9. Serve the spicy tomato and radish pasta in bowls and garnish with some fresh basil if desired.
