Spicy Tomato and Radish Pasta

This bold and flavorful vegan pasta dish is perfect for four people. The fiery combination of tomatoes, radishes, and red pepper flakes creates a zesty and satisfying meal that will leave everyone asking for seconds. Enjoy!
Ingredients
- 1 pound of pasta
- 4 large tomatoes, diced
- 1 cup of sliced radishes
- 1 tablespoon of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of red pepper flakes
- Salt and pepper to taste
Instructions
- Heat the pressure cooker over medium heat and add the olive oil.
- Add the minced garlic and sauté for a minute until fragrant.
- Add the diced tomatoes, sliced radishes, and red pepper flakes to the pressure cooker.
- Season with salt and pepper to taste.
- Close the pressure cooker and cook for 5 minutes.
- While the pressure cooker is working its magic, cook the pasta according to the package instructions until al dente.
- Once the pressure cooker has released its pressure, carefully open it.
- Add the cooked pasta to the pressure cooker and toss everything together until well combined.
- Serve the spicy tomato and radish pasta in bowls and garnish with some fresh basil if desired.
