Spicy Turkey and Bok Choy Stir-Fry

In this recipe, we’re combining the richness of turkey breast with the sweetness of bok choy and a kick of heat from canned tomatoes. This dish is perfect for a quick and flavorful dinner that’s sure to impress.

Ingredients

  • 1 1/2 lbs turkey breast, cut into bite-sized pieces
  • 1 bunch bok choy, cleaned and chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • Fresh cilantro, chopped (optional)

Instructions

  1. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
  2. Add the turkey breast and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.
  3. Add the remaining 1 tablespoon of oil to the skillet. Add the minced garlic and grated ginger and cook, stirring constantly, for 1 minute.
  4. Add the chopped bok choy to the skillet and cook, stirring occasionally, until wilted, about 3-4 minutes.
  5. Add the diced tomatoes, garam masala, cumin, cayenne pepper, salt, and black pepper to the skillet. Stir to combine.
  6. Add the cooked turkey breast back into the skillet and stir to combine with the sauce.
  7. Reduce heat to low and simmer, uncovered, for 5-7 minutes or until the turkey is cooked through.
  8. Taste and adjust seasoning as needed.
  9. Garnish with chopped cilantro, if desired.
