Spicy Turkey and Bok Choy Stir-Fry

In this recipe, we’re combining the richness of turkey breast with the sweetness of bok choy and a kick of heat from canned tomatoes. This dish is perfect for a quick and flavorful dinner that’s sure to impress.
Ingredients
- 1 1/2 lbs turkey breast, cut into bite-sized pieces
- 1 bunch bok choy, cleaned and chopped
- 1 can (14.5 oz) diced tomatoes
- 1 tsp garam masala
- 1 tsp ground cumin
- 1/2 tsp cayenne pepper
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- Fresh cilantro, chopped (optional)
Instructions
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
- Add the turkey breast and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.
- Add the remaining 1 tablespoon of oil to the skillet. Add the minced garlic and grated ginger and cook, stirring constantly, for 1 minute.
- Add the chopped bok choy to the skillet and cook, stirring occasionally, until wilted, about 3-4 minutes.
- Add the diced tomatoes, garam masala, cumin, cayenne pepper, salt, and black pepper to the skillet. Stir to combine.
- Add the cooked turkey breast back into the skillet and stir to combine with the sauce.
- Reduce heat to low and simmer, uncovered, for 5-7 minutes or until the turkey is cooked through.
- Taste and adjust seasoning as needed.
- Garnish with chopped cilantro, if desired.
