Spicy Vegetable Stir-Fry

This vibrant and flavorful Indian-style stir-fry combines the goodness of beans and carrots with aromatic spices. Perfect for a quick and nutritious meal for two, this dish is not only easy to prepare but also a delightful way to enjoy a variety of vegetables.
Ingredients
- 1 medium onion, finely chopped
- 1/2 teaspoon salt (adjust to taste)
- 1 teaspoon chili powder (adjust to taste)
- 2 cloves of garlic, minced
- 1 teaspoon ginger, grated
- 1 cup beans (green beans or any preferred variety), chopped
- 1 medium carrot, julienned
- 2-3 cloves
- 1/2 stick of cinnamon
- 2 tablespoons oil (vegetable or olive oil)
- 1/2 teaspoon turmeric powder
Instructions
- Heat the oil over medium heat. Once hot, add the cloves and cinnamon stick. Sauté for a minute until fragrant.
- Add the finely chopped onions to the pan. Cook until they turn translucent and slightly golden, about 3-4 minutes.
- Stir in the minced garlic and grated ginger. Cook for an additional 1-2 minutes until the raw smell disappears.
- Sprinkle in the turmeric powder and chili powder. Mix well and let the spices cook for about a minute.
- Introduce the chopped beans and julienned carrots to the pan. Stir everything together to coat the vegetables with the spices.
- Add salt to taste. Mix well and cover the pan. Allow the vegetables to cook for about 5-7 minutes, stirring occasionally, until they are tender but still crisp.
- Once the vegetables are cooked, remove the lid and let any excess moisture evaporate for a couple of minutes. Adjust seasoning if necessary.
- Once done, remove from heat and serve hot. This dish pairs wonderfully with rice or flatbreads.
