Spinach and Carrot Omelette Recipe

This omelette recipe is perfect for a quick and healthy breakfast or lunch for 4 people. It’s loaded with fresh spinach, crunchy carrots, and protein-packed eggs.


  • 4 medium sized Carrots, peeled and grated
  • 2 cups fresh Spinach leaves, washed and finely chopped
  • 8 large Eggs
  • 2 tbsp Olive Oil
  • Salt and pepper to taste


  1. In a large bowl, whisk the eggs until they're frothy. Then, Add the grated carrots and chopped spinach leaves to the eggs and mix everything together until well combined.
  2. Heat the olive oil in a non-stick pan over medium-high heat. Pour the egg mixture into the pan and then spread the mixture evenly with a spatula. Cook the omelette for 4-5 minutes or until the bottom is golden brown.
  3. Flip the omelette over with a spatula or by sliding it onto a plate, and then gently return it to the pan. Cook the other side until browned, about 2-3 minutes.
  4. Remove the omelette from the pan and transfer it to a large serving platter. Cut into 4 equal pieces and serve hot.
  5. Serve with a side of fresh salad or toasted bread for a complete and healthy meal.
