Spinach and Carrot Omelette Recipe

This omelette recipe is perfect for a quick and healthy breakfast or lunch for 4 people. It's loaded with fresh spinach, crunchy carrots, and protein-packed eggs.
Ingredients
- 4 medium sized Carrots, peeled and grated
- 2 cups fresh Spinach leaves, washed and finely chopped
- 8 large Eggs
- 2 tbsp Olive Oil
- Salt and pepper to taste
Instructions
- In a large bowl, whisk the eggs until they're frothy. Then, Add the grated carrots and chopped spinach leaves to the eggs and mix everything together until well combined.
- Heat the olive oil in a non-stick pan over medium-high heat. Pour the egg mixture into the pan and then spread the mixture evenly with a spatula. Cook the omelette for 4-5 minutes or until the bottom is golden brown.
- Flip the omelette over with a spatula or by sliding it onto a plate, and then gently return it to the pan. Cook the other side until browned, about 2-3 minutes.
- Remove the omelette from the pan and transfer it to a large serving platter. Cut into 4 equal pieces and serve hot.
- Serve with a side of fresh salad or toasted bread for a complete and healthy meal.
