Spinach and Lentil Curry

Ingredients
- 1 cup green moong (split green gram)
- 1 cup masoor dal (red lentils)
- 2 cups fresh spinach, chopped
- 1 large onion, finely chopped
- 2 tomatoes, chopped
- 2-3 green chilies, slit (adjust to taste)
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- 2 tablespoons oil (vegetable or ghee)
- Salt to taste
- Fresh coriander leaves for garnish
- 4 cups water
Instructions
- Prepare the Lentils: Rinse the green moong and masoor dal under running water until the water runs clear. Soak them in water for about 30 minutes, then drain.
- Cook the Lentils: In a large pot, add the soaked lentils and 4 cups of water. Bring to a boil, then reduce the heat and simmer for about 20-25 minutes, or until the lentils are tender. Skim off any foam that forms.
- Sauté the Aromatics: In a separate pan, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Then add the chopped onions and sauté until they turn golden brown.
- Add Spices and Tomatoes: Stir in the ginger-garlic paste, green chilies, turmeric powder, and red chili powder. Cook for 2-3 minutes until fragrant. Add the chopped tomatoes and cook until they soften and break down.
- Combine Everything: Once the lentils are cooked, add the sautéed mixture to the pot with lentils. Stir in the chopped spinach and salt to taste. Simmer for another 5-10 minutes until the spinach wilts and the flavors meld together.
- Finish Off: Stir in the garam masala and cook for an additional minute. Adjust seasoning as needed.
- Serve: Garnish with fresh coriander leaves and serve hot with steamed rice or your favorite Indian bread.
