Ingredients
- 4 large eggs
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, hulled and sliced
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- Fresh mint leaves (for garnish, optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large mixing bowl, beat the eggs and granulated sugar together until the mixture is thick and pale, about 5-7 minutes.
- Sift together the flour, baking powder, and salt in a separate bowl.
- Gently fold the dry ingredients into the egg mixture, being careful not to deflate the batter.
- Stir in the melted butter and vanilla extract until combined.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- While the cake is cooling, prepare the whipped cream. In a mixing bowl, beat the heavy whipping cream and powdered sugar together until soft peaks form.
- Once the cake is completely cool, slice it in half horizontally to create two layers.
- Place one layer on a serving plate and spread half of the whipped cream over it. Top with half of the sliced strawberries.
- Place the second layer of cake on top and repeat the process with the remaining whipped cream and strawberries.
- Garnish with fresh mint leaves, if desired, and serve.
