Stuffed Green Peppers with Ground Beef

Ingredients
- 2 large green peppers
- 1/2 lb ground beef
- 1/2 cup cooked rice
- 1/2 small onion, finely chopped
- 1 clove garlic, minced
- 1/2 cup canned diced tomatoes (with juice)
- 1/2 cup shredded cheddar cheese
- 1 tablespoon olive oil
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried basil
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the green peppers and remove the seeds and membranes. Set the peppers aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
- Add the minced garlic to the skillet and cook for another minute until fragrant.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. This should take about 5-7 minutes.
- Stir in the cooked rice, canned diced tomatoes (with juice), Worcestershire sauce, salt, black pepper, dried oregano, and dried basil. Cook for another 2-3 minutes until well combined and heated through.
- Remove the skillet from the heat and stir in half of the shredded cheddar cheese.
- Spoon the beef mixture into the hollowed-out green peppers, packing it in tightly.
- Place the stuffed peppers in a baking dish and cover them with aluminum foil.
- Bake in the preheated oven for 30 minutes.
- Remove the foil and sprinkle the remaining shredded cheddar cheese on top of the peppers.
- Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let the peppers cool for a few minutes before serving.
