Ingredients
- 4 medium sweet potatoes
- 2 cups cooked chicken, shredded
- 1 cup apple slices
- 1/2 cup raisins
- 1/2 cup Oreo cream (from crushed Oreo cookies)
- 1/4 cup Galar sauce (mix of cinnamon, egg wash, and cocoa powder)
- 4 slices of bread, toasted and crumbled
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly, then pierce them with a fork. Place them on a baking sheet and bake for 45-60 minutes or until tender.
- While the sweet potatoes are baking, cook the chicken if not already done. Season with salt and pepper, then shred it and set aside.
- In a large bowl, mix the shredded chicken, apple slices, raisins, and crumbled toasted bread. Add salt and pepper to taste.
- In a small bowl, combine the cinnamon, egg wash, and cocoa powder to create the Galar sauce.
- Once the sweet potatoes are done, let them cool slightly. Cut them in half lengthwise and scoop out some of the flesh to create a boat shape. Mix the sweet potato flesh with the chicken filling and add the Galar sauce.
- Fill each sweet potato half with the chicken and apple mixture. Top with a dollop of Oreo cream.
- Return the filled sweet potatoes to the oven and bake for an additional 15-20 minutes, until heated through and slightly crispy on top.
- Remove from the oven and let cool for a few minutes. Serve warm and enjoy!
