Succulent Chinese Pork and Pumpkin Stew
What Started it all:
Pork loins, Pumpkin, dried fruits (raisins, apricots), pressure cooker

Ingredients
- 1.5 lb pork loins, cut into cubes
- 1 small pumpkin, peeled and diced
- 1/2 cup dried fruits (raisins, apricots)
- Water
- Salt and pepper to taste
Instructions
- Season the pork loins with salt and pepper.
- In a pressure cooker, add the seasoned pork loins, diced pumpkin, and dried fruits.
- Pour enough water to cover the ingredients.
- Close the pressure cooker and cook on high pressure for about 20 minutes.
- Once done, release the pressure and carefully open the cooker.
- Adjust the seasoning if needed and serve the succulent Chinese pork and pumpkin stew hot.
