Succulent Short Ribs with Beet Rice
What Started it all:
Short ribs, Beet, black pepper, rice cooker
<em>(Seasoning the short ribs with black pepper and giving them a good rub)</em>
Ingredients
- 2 lbs short ribs
- 2 beets, peeled and diced
- Black pepper to taste
- 2 cups rice
- Water for the rice cooker
Instructions
- Preheat your oven to 350°F.
- Season the short ribs generously with black pepper and place them in a roasting pan.
- Add the diced beets to the roasting pan with the short ribs.
- Cover the pan with foil and roast in the oven for 2-3 hours, or until the short ribs are tender and the beets are caramelized.
- While the short ribs are roasting, rinse the rice and place it in the rice cooker.
- Add water according to the rice cooker instructions and start the cooking process.
- Once the short ribs are ready, carefully remove them from the pan and set aside.
- Fluff the cooked rice with a fork and fold in the caramelized beets.
- Serve the succulent short ribs alongside the flavorful beet rice.
