Succulent Skillet Ribs with Cauliflower Mash

Ingredients
- 2 racks of ribs (approx. 2 pounds each)
- 1 large cauliflower head
- Salt (to taste)
- Olive oil (for cooking)
- Freshly ground black pepper (optional)
- Fresh herbs for garnish (optional)
Instructions
- Prepare the Ribs: Preheat your oven to 300°F (150°C). Season the ribs generously with salt on both sides. Heat a large skillet over medium-high heat and add a drizzle of olive oil. Sear the ribs in the skillet until they are browned on both sides, about 3-4 minutes per side.
- Oven-Bake the Ribs: Transfer the seared ribs to a baking dish and cover tightly with aluminum foil. Place in the preheated oven and bake for 2.5 to 3 hours, or until the ribs are tender and the meat is falling off the bone.
- Prepare the Cauliflower Mash: While the ribs are baking, bring a large pot of salted water to a boil. Cut the cauliflower into florets and add to the boiling water. Cook until the cauliflower is tender, about 10-12 minutes. Drain the cauliflower and transfer to a food processor or blender. Add a pinch of salt and a drizzle of olive oil, then blend until smooth and creamy.
- Finish and Serve: Once the ribs are done, remove them from the oven and let them rest for a few minutes. Slice the ribs into individual portions. Serve the ribs alongside a generous helping of cauliflower mash. Optional: Garnish with freshly ground black pepper and fresh herbs.
