Ingredients
- 4 slices of bread
- 1 cup sushi rice
- 1/2 cup rice vinegar
- 1/4 cup sugar
- 1/2 tsp salt
- 1 cup imitation crab meat (or real crab meat if preferred)
- 1/2 cup mayonnaise
- 2 tbsp sriracha (adjust to taste)
- 1/4 cup cream cheese, softened
- 1/4 cup shredded cheddar cheese
- 1 avocado, sliced
- 1/4 cup green onions, chopped
- 1/4 cup furikake seasoning
- Soy sauce for drizzling (optional)
- Nori sheets for garnish (optional)
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- Cook the rice according to package instructions.
- In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Pour over the cooked rice and mix well to combine. Let it cool to room temperature.
- In a large bowl, combine the imitation crab meat, mayonnaise, sriracha, and softened cream cheese. Mix until well incorporated.
- Gently fold in the cooled sushi rice and shredded cheddar cheese.
- Preheat your oven to 375°F (190°C).
- Place the slices of bread on a baking sheet and toast them in the oven for about 5-7 minutes, or until they are golden brown and crispy.
- Evenly spread the sushi bake mixture over each slice of toasted bread.
- Place the baking sheet back in the oven and bake for another 10-12 minutes, or until the top is slightly browned and bubbly.
- Remove the sushi bake toasts from the oven and let them cool slightly.
- Top each toast with sliced avocado, chopped green onions, and a sprinkle of furikake seasoning.
