Sushi Hand Rolls with Wasabi Flour and Ham

Ingredients
- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 4 sheets nori (seaweed)
- 200g fresh salmon, thinly sliced
- 100g ham, thinly sliced
- 2 tablespoons wasabi flour
- 4 tablespoons soy sauce
- 2 eggs, scrambled
- Optional: pickled ginger, wasabi paste, and sliced cucumber for serving
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- Combine the rice and water in a rice cooker and cook according to the manufacturer’s instructions.
- Once cooked, transfer the rice to a large bowl. While still hot, gently fold in the rice vinegar, sugar, and salt until well combined. Allow the rice to cool to room temperature.
- In a non-stick pan, scramble the eggs until fully cooked. Set aside.
- Cut each nori sheet in half to create 8 pieces total.
- Place a half sheet of nori, shiny side down, on a clean surface or sushi mat.
- Wet your hands with water to prevent the rice from sticking. Take about 1/4 cup of prepared sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.
- Sprinkle a small amount of wasabi flour over the rice, if desired.
- Place a few slices of salmon, ham, and a spoonful of scrambled eggs in the center of the rice.
- Roll the nori sheet starting from the bottom, using your fingers to keep the filling in place. Roll tightly but gently to avoid tearing the nori.
- Repeat with the remaining nori sheets and filling ingredients.
- Arrange the hand rolls on a platter.
- Serve with soy sauce, pickled ginger, wasabi paste, and sliced cucumber on the side.
