A Perfect Blend of Flavors and Textures


  • 1 cup dried black beans, rinsed and drained
  • 1 cup dried raisins
  • 1 cup dried apricots, chopped
  • 1 cup fresh green beans, trimmed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 cup water
  • 1 tablespoon honey


  1. Rinse the black beans and pick out any debris or stones.
  2. In the crockpot, combine the black beans, dried raisins, chopped apricots, and green beans.
  3. In a small bowl, whisk together the olive oil, chopped onion, garlic, cumin, smoked paprika, salt, and pepper.
  4. Pour the oil mixture over the black bean mixture in the crockpot.
  5. Add the chicken broth, water, and honey to the crockpot.
  6. Cook on low for 6-8 hours or high for 3-4 hours.
  7. Serve hot, garnished with chopped fresh cilantro, if desired.
