Sweet and Savory Pork Chops with Leek

Ingredients
- 4 pork chops
- 2 medium leeks, cleaned and chopped
- 2 tbsp sugar
- 1 tsp sesame oil
- Salt and pepper to taste
- 1 tsp Gochujang (Korean chili paste)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, whisk together sugar, sesame oil, salt, and pepper.
- Add the chopped leeks to the bowl and toss to combine.
- Add the pork chops to the bowl and toss to coat with the leek mixture.
- Line a baking sheet with parchment paper and arrange the pork chops in a single layer.
- Bake for 20-25 minutes or until the pork chops reach an internal temperature of 145°F (63°C).
- While the pork chops are baking, prepare the Gochujang glaze by whisking together 2 tbsp of Gochujang with 1 tbsp of water in a small bowl.
- After 15 minutes of baking, brush the Gochujang glaze over the pork chops.
- Return the pork chops to the oven and bake for an additional 5-7 minutes or until the glaze is caramelized.
- Remove from the oven and let rest for 5 minutes before serving.
