Ingredients

  • 4 pork chops
  • 2 medium leeks, cleaned and chopped
  • 2 tbsp sugar
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • 1 tsp Gochujang (Korean chili paste)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, whisk together sugar, sesame oil, salt, and pepper.
  3. Add the chopped leeks to the bowl and toss to combine.
  4. Add the pork chops to the bowl and toss to coat with the leek mixture.
  5. Line a baking sheet with parchment paper and arrange the pork chops in a single layer.
  6. Bake for 20-25 minutes or until the pork chops reach an internal temperature of 145°F (63°C).
  7. While the pork chops are baking, prepare the Gochujang glaze by whisking together 2 tbsp of Gochujang with 1 tbsp of water in a small bowl.
  8. After 15 minutes of baking, brush the Gochujang glaze over the pork chops.
  9. Return the pork chops to the oven and bake for an additional 5-7 minutes or until the glaze is caramelized.
  10. Remove from the oven and let rest for 5 minutes before serving.
