Sweet and Sour Chicken with Pineapple

A delicious and tangy chicken dish with the sweetness of pineapple. This recipe is perfect for a family dinner and can be easily adjusted to serve four people.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 2 tablespoons ketchup
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1/4 cup water
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together soy sauce, rice vinegar, ketchup, brown sugar, cornstarch, and water. Set aside.
- Season the chicken breasts with salt and pepper on both sides.
- Heat vegetable oil in a large skillet over medium-high heat. Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic, sliced onions, and bell peppers. Cook until the vegetables are tender, about 5 minutes.
- Return the chicken to the skillet and add the pineapple chunks. Pour the sauce mixture over the chicken and vegetables.
- Reduce the heat to medium-low and simmer for about 10 minutes, or until the chicken is cooked through and the sauce has thickened.
- Serve the sweet and sour chicken over steamed rice or noodles.
