Sweet and Sour Chicken with Pineapple

A delicious and tangy chicken dish with the sweetness of pineapple. This recipe is perfect for a family dinner and can be easily adjusted to serve four people.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 2 tablespoons ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together soy sauce, rice vinegar, ketchup, brown sugar, cornstarch, and water. Set aside.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the minced garlic, sliced onions, and bell peppers. Cook until the vegetables are tender, about 5 minutes.
  5. Return the chicken to the skillet and add the pineapple chunks. Pour the sauce mixture over the chicken and vegetables.
  6. Reduce the heat to medium-low and simmer for about 10 minutes, or until the chicken is cooked through and the sauce has thickened.
  7. Serve the sweet and sour chicken over steamed rice or noodles.
