  1. Begin by preheating a skillet or wok over medium-high heat. Add the olive oil and minced garlic, and sauté for a minute until fragrant.
  2. Add the chicken breasts and cook for 5-7 minutes on each side until golden brown.
  3. In the meantime, combine the soy sauce, honey, rice vinegar, red pepper flakes, and cornstarch in a small bowl, whisking well to ensure there are no lumps.
  4. Add the pineapple chunks to the pan with the chicken and sauté for a couple of minutes until heated through.
  5. Pour the soy sauce mixture over the chicken and pineapple and stir well.
  6. Lower the heat and allow the mixture to simmer for 5-7 minutes, allowing the sauce to thicken and coat the chicken and pineapple.
