Sweet Potato Burnt Ends Stir Fry

A bold and flavorful twist on traditional stir-fry, combining the richness of burnt ends with the sweetness of sweet potatoes.


  • 1 large sweet potato, peeled and cut into 1-inch cubes
  • 1 cup burnt ends, cut into small pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • Salt and pepper, to taste
  • Scallions, chopped (optional)


  1. Heat the wok or large skillet over high heat.
  2. Add the vegetable oil and swirl it around to coat the bottom.
  3. Add the sweet potato cubes and cook, stirring occasionally, for 5-7 minutes or until they start to brown.
  4. Add the burnt ends, garlic, and ginger. Cook, stirring constantly, for an additional 2-3 minutes.
  5. Add the soy sauce and stir to combine.
  6. Cook for an additional 1-2 minutes, until the sweet potatoes are tender and the burnt ends are caramelized.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped scallions, if desired.
