This delicious Sweet Potato Chicken Skillet is a perfect one-pan meal that's both nutritious and easy to make. The tender chicken pairs beautifully with the naturally sweet and creamy sweet potatoes, creating a comforting dish that's packed with flavor.
Ingredients
- 1 chicken breast (about 6 oz)
- 1 medium sweet potato
- 1 tablespoon olive oil
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley (for garnish, optional)
Instructions
- Peel and dice the sweet potato into small cubes (about 1/2 inch).
- In a skillet, heat 1/2 tablespoon of olive oil over medium heat. Add the diced sweet potato and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until tender and slightly caramelized.
- While the sweet potatoes are cooking, season the chicken breast with paprika, garlic powder, salt, and pepper on both sides.
- In the same skillet, push the sweet potatoes to one side and add the remaining 1/2 tablespoon of olive oil. Place the seasoned chicken breast in the skillet. Cook for about 5-7 minutes on each side until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Once the chicken is cooked, mix it with the sweet potatoes in the skillet. Remove from heat and let it rest for a couple of minutes. Garnish with fresh parsley if desired.
