Sweet Potato Shepherd's Pie

This Shepherd’s Pie with a twist is a delicious and hearty dish that will satisfy your comfort food cravings. The sweet potatoes add a unique and flavorful touch to this classic recipe.
Ingredients
- 1 lb ground lamb or beef
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1 cup beef or vegetable broth
- 2 tbsp tomato paste
- 2 tbsp Worcestershire sauce
- 2 tsp fresh thyme, chopped
- 2 large sweet potatoes, peeled and diced
- 4 tbsp butter
- 1/4 cup milk
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, brown the ground lamb or beef over medium heat. Add the chopped onion, carrots, and garlic, and cook until the vegetables are softened.
- Stir in the frozen peas, beef or vegetable broth, tomato paste, Worcestershire sauce, and chopped thyme. Simmer for 10 minutes, then season with salt and pepper to taste.
- While the meat mixture is simmering, boil the sweet potatoes in a separate pot until tender. Drain and mash them with butter, milk, salt, and pepper until smooth.
- Transfer the meat mixture to a baking dish and spread the mashed sweet potatoes on top, creating a smooth layer.
- Place the dish in the preheated oven and bake for 25-30 minutes, or until the sweet potato topping is golden brown and the filling is bubbling.
