This recipe combines the succulent flavors of tandoori turkey with the aromatic spices of potatoes and green beans for a delightful Indian-inspired meal.

Ingredients

  • 4 turkey breasts
  • 500g green beans
  • 4 medium-sized potatoes
  • Tandoori marinade
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp turmeric
  • 1 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Marinate the turkey breasts in tandoori marinade for at least 2 hours, or preferably overnight for enhanced flavor.
  2. Preheat the oven to 180°C (350°F).
  3. Wash and chop the potatoes into cubes, and trim the green beans.
  4. Parboil the potatoes in salted water for 5 minutes, then drain and set aside.
  5. Heat the vegetable oil in a large pan over medium heat.
  6. Add the cumin seeds and mustard seeds, allowing them to sizzle for a minute.
  7. Stir in the parboiled potatoes, turmeric, and garam masala, ensuring the potatoes are coated with the spices.
  8. Transfer the spiced potatoes to a baking dish and place in the preheated oven for 15-20 minutes, or until they are golden and tender.
  9. Meanwhile, grill the marinated turkey breasts for 15-20 minutes, or until fully cooked and charred on the edges.
  10. In the same pan used for the potatoes, quickly stir-fry the green beans until they are tender-crisp.
  11. Serve the tandoori turkey alongside the spiced potatoes and green beans, garnished with fresh coriander leaves.
