Ingredients

Instructions

  1. Preheat the instant pot on sauté mode.
  2. Season the pulled pork with salt and pepper.
  3. Sear the pork in the instant pot until browned on all sides.
  4. Add a splash of apple cider vinegar to deglaze the pot, scraping up any browned bits from the bottom.
  5. Pour in water until the pork is halfway covered, then lock the lid and set the instant pot to cook on high pressure for 60 minutes.
  6. While the pork is cooking, prepare the bok choy by washing and chopping it into bite-sized pieces.
  7. Once the pork is done, allow the pressure to release naturally for 10 minutes, then carefully release any remaining pressure.
  8. Remove the pork from the instant pot and shred it using two forks.
  9. In a separate pan, sauté the bok choy with a splash of balsamic vinegar until tender.
  10. Serve the tangy pulled pork on a bed of the sautéed bok choy, drizzling with any remaining cooking juices.
