Tangy Pulled Pork with Bok Choy

Ingredients

Instructions
- Preheat the instant pot on sauté mode.
- Season the pulled pork with salt and pepper.
- Sear the pork in the instant pot until browned on all sides.
- Add a splash of apple cider vinegar to deglaze the pot, scraping up any browned bits from the bottom.
- Pour in water until the pork is halfway covered, then lock the lid and set the instant pot to cook on high pressure for 60 minutes.
- While the pork is cooking, prepare the bok choy by washing and chopping it into bite-sized pieces.
- Once the pork is done, allow the pressure to release naturally for 10 minutes, then carefully release any remaining pressure.
- Remove the pork from the instant pot and shred it using two forks.
