- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder (optional)

Instructions
- Prep the Veggies: Wash and finely chop the spinach and bell peppers. If using fresh sweet potato, peel, cube, and steam it until soft, then mash it with a fork.
- Mix the Filling: In a bowl, combine the shredded cheese, chopped spinach, bell peppers, mashed sweet potato, garlic powder, paprika, and a pinch of salt. Mix well until all ingredients are evenly combined.
- Assemble the Quesadillas: Place one tortilla on a flat surface. Spread half of the veggie and cheese mixture evenly over the tortilla. Top with the second tortilla.
- Cook the Quesadillas: Heat the olive oil in a skillet over medium heat. Carefully place the assembled quesadilla in the skillet. Cook for about 3-4 minutes on one side until golden brown and the cheese starts to melt.
- Flip and Finish: Gently flip the quesadilla with a spatula and cook for an additional 3-4 minutes until the other side is golden brown and crispy.
