Tofu and Beet Coffee Stir Fry

This unique and flavorful Mexican-inspired stir fry combines the earthy flavors of tofu and beet with the rich aroma of coffee, all cooked to perfection in a wok. It's a dish that's sure to impress and delight your taste buds!
Ingredients
- 1 block of firm tofu, cubed
- 2 medium-sized beets, peeled and sliced
- 2 tablespoons of ground coffee
- 2 tablespoons of vegetable oil
- 1 onion, thinly sliced
- 3 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/4 cup of soy sauce
- 2 tablespoons of honey
- Salt and pepper to taste
- Cooked rice, for serving
Instructions
- In a small bowl, mix the ground coffee with the soy sauce and honey to create a marinade.
- Place the cubed tofu in the marinade and let it sit for 15-20 minutes.
- Heat the vegetable oil in a wok over medium-high heat.
- Add the marinated tofu to the wok and cook until golden brown on all sides. Remove from the wok and set aside.
- In the same wok, add the sliced beets and stir fry for 3-4 minutes until they start to soften.
- Add the sliced onion, minced garlic, and bell peppers to the wok and stir fry for an additional 2-3 minutes.
- Return the cooked tofu to the wok and stir to combine with the vegetables.
- Season with salt and pepper to taste.
- Serve the tofu and beet coffee stir fry over cooked rice and enjoy!
