Tofu and Beet Coffee Stir Fry

  • 1 block of firm tofu, cubed
  • 2 medium-sized beets, peeled and sliced
  • 2 tablespoons of ground coffee
  • 2 tablespoons of vegetable oil
  • 1 onion, thinly sliced
  • 3 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/4 cup of soy sauce
  • 2 tablespoons of honey
  • Salt and pepper to taste
  • Cooked rice, for serving


  1. In a small bowl, mix the ground coffee with the soy sauce and honey to create a marinade.
  2. Place the cubed tofu in the marinade and let it sit for 15-20 minutes.
  3. Heat the vegetable oil in a wok over medium-high heat.
  4. Add the marinated tofu to the wok and cook until golden brown on all sides. Remove from the wok and set aside.
  5. In the same wok, add the sliced beets and stir fry for 3-4 minutes until they start to soften.
  6. Add the sliced onion, minced garlic, and bell peppers to the wok and stir fry for an additional 2-3 minutes.
  7. Return the cooked tofu to the wok and stir to combine with the vegetables.
  8. Season with salt and pepper to taste.
  9. Serve the tofu and beet coffee stir fry over cooked rice and enjoy!
